Throughput depends on the number of serving stations, how many dishes each guest selects, and whether the line is self-serve or staffed, with a single-line self-serve buffet typically processing meaningfully fewer guests per minute than a double-sided or multi-station layout.
Does adding a second buffet line double the throughput?+
It substantially increases throughput but not always exactly double, since guests still need to queue to enter each line and multiple lines can create their own bottleneck at the entry point if not spaced well. A well-designed double line typically comes close to doubling effective throughput for larger events.
How long should I plan for the whole guest list to get through the buffet?+
Multiply your total guest count by the average time per guest at the buffet (from entering the line to leaving with a full plate), then divide by the number of parallel lines, and add a startup ramp-up period, since the first few minutes of any buffet opening tend to move more slowly than the steady-state rate.
